Daring Kitchen – Gumbo

Our May hostess, Denise, of There’s a Newf in My Soup!, challenged The Daring Cooks to make Gumbo! She provided us with all the recipes we’d need, from creole spices, homemade stock, and Louisiana white rice, to Drew’s Chicken & Smoked Sausage Gumbo and Seafood Gumbo from My New Orleans: The Cookbook, by John Besh.

I decided to use a different recipe that the one that was supplied. I used Okra Gumbo from Foodjimoto.

I cut up the chicken fillet and mixed that with some of the creole spice while I chopped the celery, onion, peppers and okra. Browned the chicken, added chorizio and bacon. Added celery, onion, peppers and tomatoes, then finally the stock and okra. I let it bubble away and thicken.
If i did it that way again I would cut out some of the salt in the creole spice as it was a little too salty for my liking.

I was a little apprenhensive about the okra at first, but it was a big success.
